Expectacular lot composed of 12 bottles of white wine fermented and aged in oak barrels. Several denominations of origin (Rueda, Rioja, Valdeorras, Bierzo).

2 bottles of Baigorri white fermented in barrel vintage 2014: Baigorri Blanco Fermentado En Barrica is a white wine from D.O. Rioja, produced by the Baigorri winery. It is a modern cutting cellar that applies gravity throughout the winemaking process, both for the movement of wine and grapes.
Baigorri is located in the municipality of Samaniego, south of Álava (Rioja Alavesa).

Baigorri Blanco Fermentado En Barrica is made from the varieties of Viura (90%) and Malvasía (10%). The grapes come from old vines cultivated in a sustainable way.

For its elaboration, the grape is destemmed by hand and selected grain by grain in selection tables. Subsequently a maceration is carried out with its skins for a few hours.

Finally, Baigorri Blanco Fermentado en Barrica's vinification is carried out by fermentation and aging in new French oak barrels with its lees being batched regularly for 6-8 months.

Pairing: Appetizer, fish rices, complex salads, smoked, creams, baked white fish, Iberian ham, fish stew, cod, blue cheese, goat cheese, tempura.

ELABORATION: Vinification: Destemming of the grape. Soft pressing of the grapes for the maintenance of the must. Deburring and clarification of the must. Fermentation in stainless steel tank. at a controlled temperature of 16ºC. Encubado and finalization of the alcoholic fermentation in new 300 l barrels. French oak. Barrel aging in the presence of its lees for 4 months with weekly nattonages. Stabilization and bottling. Aging in bottle at least 8 months before its release on the market.

TASTING NOTES: View: Straw yellow with green iridescence, clean and bright.

Nose: Elegant, complex and intense. Fruity notes of Paraguayan, nectarine and grapefruit, which evolve towards white flowers such as orange blossom and jasmine. Finally creamy aromas of aging, white chocolate and butter appear.

Palate: Complex, fatty and with a very long aftertaste in which the fruity notes merge with the creamy and toasted touches of the wood. Acidity very well compensated that augurs a long longevity.

An elegant Verdejo from old vines fermented in oak barrels and aged for 8 months. Its limited production responds to the shortage of the raw material, bunches of Verdejo of very old vines, in many cases prefiloxéricas, that surpass the century of existence and that are located in small payments of sandy surface. Ideal for those who are looking for a modern cut and very easy to drink.

Nose: very complex and subtle on the nose, with a mineral character, displaying notes of citrus, white flowers and ripe fruit (pineapple) fused with elegant toasted and spicy notes.
Boca.En mouth excels its fruity character in a broad, tasty and serious without losing the freshness provided by a balanced acidity, very long end of bitter fruit and mineral and smoked memories.
Service temperature between 8 and 10ºC.
Consumption: Optimum until 2018. The most suitable temperature for wine conservation is between 14-16 ° C. The bottles should be stored horizontally, leaving the cork in contact with the wine, thus favoring a perfect closure and thus preventing the entry of oxygen and the oxidation of the wine.
Pairing: Perfectly accompanied with appetizers, seafood, seafood with intense flavor and molluscs, fish with sauces and baked, smoked sausages, white meat and roasted poultry, pasta dishes with seafood sauces, soft cheeses, creams and soups.

Aging: Once fermented the wine remains in new French oak barrels for 8 months.

Most Godellos are fresh and light, but the Godello de Tares, bred in oak on its lees for 6 months also has a greasiness and extra corpulence. The wines of this vintage are characterized by their ripeness on the nose, with acidity and moderate alcohol content and a wide and fat mouth.

View: Bright white with golden color, medium density.
Intense and complex nose of lemon, apple, peach and fresh melon with hints of vanilla and Swiss bun thanks to its slow aging in barrels of 500 liters of French oak.
Palate: Dense on the palate, with moderate acidity and alcohol, very polished tannins and with a taste of quince, lime, grapefruit, apricot and pastries.

VINEYARD AND ELABORATION
Description: Vineyard of vines in trellis and in glass at an altitude of 550 meters above sea level, with moderate undulations.
Surface 60 hectares.
Age around 15 years.
Soil: Clay-limestone with riverbed gravel.
Climate: Moderate and humid Mediterranean. The 2016 vintage was warm, with spontaneous rains that produced delays in ripening. All this was translated into mature wines on the nose, with acidity and moderate alcoholic strength and a wide, fat mouth.
Yield 2 kilograms per strain.
Harvest: Harvested on September 25 by hand and collected in boxes of 15 kilograms. Selection of grapes in manual selection table.
Vinification: Destemming without squeezing. Fermentation with natural yeast and added for 30 days at 16ºC in stainless steel tanks of 10,000 and 20,000 liters. Pre-fermentative cold maceration. Direct unloading to a 500 liter barrel by gravity. Malolactic in barrel with natural bacteria.
Aging: Aging for 6 months in used barrels of 500 liters. A transfer is made in a waning moon.
Bottling after filtration.

The orange margaritas caress the Godello vineyards in Petín, Ourense, cradle of the D.O. Valdeorras. From the winery they claim that The Orange Republic is rebellious, but also tradition, family, past and present. It's jazz but also rock & roll. The aromas of white fruit, such as pear, apricot or peach, bathe the nose. The mouth is enveloping and tasty.
