Martin 's Cook is a sandstone saucepan, crafted with the know - how and ancestral techniques of the potters of Bouffioulx, Belgium. She is the creation of designer Eric Martin. In an high paced era, where people no longer take the time to share these privileged moments of the art of the table with family, friends, colleagues, ... the MARTIN'S COOK will give back colors and titles of nobility to convivial meals served at the table. The basic principle is simple: you pour a liquid (water, broth, juice ...) to the grid height. This function is essential for the success of cooking and to avoid thermal shock. The various components of the recipe: meat, game, poultry, fish, shellfish, vegetables, fruits, herbs, spices, condiments,... are mixed and placed on the grid. The lid is placed above before baking. Its first function is to make the saucepan hermetic, and to allow a vacuum cooking of all the food. You can also use it to cook potatoes, pickling shallots, onions, fruits... All with skin! It can also serve as a serving dish when serving guests.
You then place the Martin's Cook on the bottom of the oven between 200 and 220 degrees (rotating heat if your oven has the function). It is very important. Never preheat your oven! You must bake cold to allow the sandstone accumulate gradually the temperature and avoid thermal shock causing breakage. Cooking in stoneware requires a high temperature. The sandstone allows the accumulation of the heat, which is repeatedly diffused to the whole of the food, and thus cooks them homogeneously. No need for great culinary talents! The concept consists of a unique baking in a closed, fat-free vase with all the ingredients of the recipe placed in the Martin's Cook. Variants with cooking on the lid and without the grill are also possible.
